I've always loved greyhounds. They are an underrated dog because they are so quiet. They are really just so loving and happy to lope about at the feet of their loved human. Our pooch, that we have never known the breed of, must surely have a touch of greyhound. She has the telling slim stomach and thin hook tail and she can run ridiculously fast! I'm talking 'Santas Little Helper' here. That fast!
I was surprised to discover a greyhound of another type; the Rosemary Greyhound, an absolutely delightful cocktail with a vodka base. We served it for one of our Tinker brides at her Palm Springs inspired wedding. The guests loved every last drop!

First make the Rosemary Sugar Syrup
1 cup water
1 cup sugar
4 tablespoons fresh rosemary
Place ingredients in a saucepan over medium heat until sugar has dissolved. Turn off heat and put aside, allowing rosemary to steep.
Once cooled, strain the rosemary and pour into a glass bottle (you could use a wine bottle. Remember to label it ;)
Squeeze fresh grapefruit. Ruby grapefruits are delicious and not quite so tart.
Pour into a shaker with a few cubes of ice :
60ml grapefruit juice
15 ml rosemary sugar syrup
Place lid on the shaker and give it your best bartender.
Strain into a glass over ice and top with sparkling mineral water. Garnish with a stem of rosemary, a slice of grapefruit and a fancy straw.
In Australia one standard nip is 30ml.
