December brings along with it a few challenges, in my opinion. Not only is there the usual daily life things to deal with but there is also the gift shopping, the food preparation, the travel plans, the family expectations, the budget stretching.
But, of course, when we get over all this and get into the moment, the realisation is there; this is summer, this is holidays, family time, reflection and relaxation time. Plenty to celebrate. Plenty to enjoy.
If you can get to the beach, then go drink this by the beach. If you can't, just close your eyes. The Mai Tai will transport you to your Imaginarium Beach Club, guaranteed. With Rum and sweetness and lime this is a summer holiday drink to be sipped and savoured. And I mean that, this is loaded! sip it people!
First make the Sugar Syrup
1 cup water
1 cup sugar
Place ingredients in a saucepan over medium heat until sugar has dissolved. Turn off heat and put aside.
Once cooled, pour into a glass bottle (you could use a wine bottle. Remember to label it ;)
Pour into a shaker with loads of ice :
30ml lime juice
30ml jamaican rum
30ml Bundaberg Rum
15ml dry curaçao
10ml sugar syrup
Place lid on the shaker and give it your best bartender.
Strain into a glass over crushed ice. Garnish with a large sprig of mint.
